the agent dale cooper special: cherry pie.



watching twin peaks always makes me hungry for cherry pie! vegans never seem to make pies, not sure why that is,so i thought i'd give it a shot!! the results were fantastic. this recipe is adapted from ye olde unenlightened days.

in the future my blog posts will be videos, but for now because my kitchen is small, and also because its hot and i look like crap, the recipe will be text based!!


best ever recipe for cherry pie:


for the cherry filling:

1 + 1/4 cups sugar.
3 tablespoons of either cornstarch or arrowroot powder. i prefer arrowroot as it has no taste.
1/4 teaspoon salt

2 cans of pitted cherries drained. (signature range black pitted cherries are good)
1/2 cup of cherry juice (obviously from the drained cherrys)
1/4 teaspoon almond essence (dont use anymore or it will taste like marzipan)
1/4 teaspoon red food colouring
2 teaspoons lemon juice.
1 tablespoon margarine (i use olivani)


1. preheat oven to 200 degrees
2. drain cherries and keep the juice.
3. in a bowl combine sugar, arrowroot + salt.
4. in another bowl combine cherry juice, food coloring, almond extract and lemon juice and stir.
5. pour juice into sugar mix and stir fast with a fork.
6. add the cherries making sure they have been drained well, mix all together.
7. add melted butter and let it stand

8. get started on the pie crust, and spray the pie dish with cooking oil or very lightly wipe with margarine.


for the pie crust:


3/4 cup vegetable shortening (kremelta is vegan)
1/2 teaspoon salt
1 teaspoon soy milk
1/4 cup boiling water
2 cups all-purpose flour


1. in a large bowl, combine shortening, salt, soy milk and boiling water.
2. whip with fork until smooth and creamy. be patient cos it seems like its not gonna work but it does.
3. add (by sifting in) 2 cups flour and stir with round-the-bowl strokes until all flour is incorporated.


roll the mixture out on the bench, chuck some flour down first.
roll it out until its a decentish sized circle, first putting aside a little bit of pastry for decorating the top of the pie.
put the circle in the pie dish then press in evenly with hands, if you are super skilled you will be able to roll it out until its the right size for the dish but it takes heaps of practice. try just mashing it in with your hands, it's kinda satisfying.
when the dish has the pastry base in it, pour in cherry mixture then put lattice pattern over top.
bake at 200 degrees for 55 minutes, and serve with black coffee.

mine looks like crap because i was too lazy to do it properly.
